CITRIC ACID PRODUCTION BY YARROWIA LIPOLYTICA NCIM 3589 IN SOLID STATE FERMENTATION USING PINEAPPLE WASTE AS A NOVEL SUBSTRATE

Abstract

Citric acid production in solid state fermentation (SSF) by Yarrowia lipolytica NCIM 3589 was better with pineapple waste when compared to the sugarcane bagasse, wheat bran or their combinations. The highest citric acid content achieved on pineapple waste was 1.155 g per 10 g dried pineapple waste, with moisture content of 80% in five days.
