USE OF POTATO STARCH FOR EXTRACELLULAR AMYLASE PRODUCTION BY A YEAST ISOLATE

Abstract

An amylolytic yeast isolate identified as Schwaniomyces occidental is produced extracellular amylase with maximum dextrinyzing (174 units in 15 to 18 h, pH 5.5 at 30°C) and saccharifying (120 units in 18-21 h at 30°C and pH of 5.5) activities when grown as shake flask cultures with yeast extract (0.3%) as nitrogen source. The crude amylase dextrinized and saccharified a 1% solution of soluble potato starch by 90% in 3 hours.
