BIOCHEMICAL CHANGES AND VISUAL APPEARANCE OF INDIAN MAJOR CARP, LABEO ROHITA DURING ICE STORAGE

Abstract

This study was conducted to evaluate the quality changes of fresh Indian Major Carp (IMC), Rohu during ice storage in a polystyrene insulated box for 18 days. Biochemical and visual analysis were carried out on every alternate day. Moisture content decreased significantly from the 12th day of storage. Total crude protein slightly decreased throughout the period of study where as ash content fluctuated throughout the storage study. The fat content increased up to 8th day and then slightly decreased till the end of storage period. The value of pH increased from 6.51 ± 0.00 up to 10th day and then showed a slight decreasing trend. The parameter values of Trimethylamine Nitrogen (TMAN), Total Volatile Base Nitrogen (TVBN), Free Fatty Acids (FFA) and other lipid peroxidation products like Peroxide Value (PV), Thiobar Butric Acid (TBA) value increased gradually. Both chemical analyses and visual appearance examination showed that the quality of rohu fish was in acceptable condition up to 17th day of ice storage. Results from chemical analysis were well correlated with basic visual appearance.
