Abstract

In this research rupture force and deformation at rupture point of Mazandarani sour lemon in small, medium and large size is determined with time zone of less than 19gr, between 19gr to 25gr and more than 25gr respectively and is under study with two directions for loading namely longitudinal and transverse and with loading speed 20,40,60,80 mm/min in factorial trial in completely randomized design with 7 repetition. Results showed that main effect of loading speed and loading direction is significant in probability level % 5 and main effect of lemon size for rupture force is significant in probability level %1 with decreasing of lemon size, amount of rupture force gets decreased. With decreasing of loading speed, necessary force to rupture of sour lemon is reduced. So that amount of rupture force is 20 mm/min and on average is related to loading speed 80 mm/min and on average is 193/4N. Main effect of loading direction and main effect of lemon size for deformation at rupture point of lemon is significant in probability level of %1 also double cross of loading direction and lemon size is significant in %5 of probability level. With increasing of lemon size amount of deformation at rupture point is increased in transverse and longitudinal loading is increased. With decreasing size of lemon, deformation at rupture point is decreased.
