Abstract
Pomegranate rind (PR) was found to be a potential tannin rich substrate for tannase and gallic acid production by a Mucor species.Optimization of the fermentation parameters showed maximum enzyme and gallic acid production at 37°C, pH 5.0 with 4°/o(w/v) PR and mineral salt solution after 72 h.The enzyme was optimally active at a temperature of 35°C and pH 6.2.The addition of 1% tannic acid stimulated the production by 3.9 fold while 1.5% tannic acid repressed the activity by 69.5%.The Kin values of the enzyme produced on pure tannic acid and PR were determined from Lineweaver Burk plot and found to be 0.022 and 0.019 respectively.
