MICROBIOLOGICAL ANALYSIS OF GROUND MEAT IN AMBAJOGAI, MAHARASHTRA

Abstract

A microbiological examination was made of ground meat. Ambajogai town was selected to provide information about microbiological quality of meat. One hundred samples were collected from retail shops and slaughter houses. Total coliform counts/g of majority of samples was more than 200. The total aerobic plate count was observed for majority of samples was more than 107/g. APC for all samples was between 106 to 107/g, coliforms > 6500 and Staphylococci more than 100.
