STUDIES ON FREEZING AND STORAGE CHARACTERITICS OF BLACK KINGFISH, RACHYCENTRON CANADUS (LINNAEUS), IN FILLET AND STEAK

Abstract

The subject of food processing occupies a position of main importance in the food science curriculum and this emphasis is likely to continue.A great need exist for more effective methods of food preservation. this need can be readily sustainated by documenting the existing grave prorblems with respect to providing an adequate diet for the world expanding population and by drawing the attention to the staggering amount of food that is being wsted because of inadequate preservation. Black kingfish locally known as MADUSA is a very delicious fish and avaiable in sustainable quantity. the fish grows to a very large size 1.5 mt in length an weight 45 kg. therfore, an attempt has been made in the present study to produce frozen fillet and steak from black kignfish (MADUSA) and study the frozen storage charactristics.
