ENZYMATIC AND NON-ENZYMATIC ANTIOXIDANTS IN ALUBUKHARA (COMMON PLUMS - PRUNUS DOMESTICA LINN SYN PRUNUS COMMUNIS HUDS)

Abstract

Naturally occurring sources of the plants are rich in antioxidants. Prunus domestica Linn ( Rosaceae) is a small tree. Fruits firm in texture, varying in colour from green and golden yellow to red and dark purple. Plum contains appreciable amount of sugars therefore juice used in making squash; pulp is used in pastries, meat sauces, custards, and ice creams. The present study was planned for examining enzymic (Peroxidase and polyphenoloxidase) and non enzymic (ascorbic acid, phenol, sugar and proteins in the fruit) and they were estimated from just harvested and fully ripened fruits. The results are focussed on high level of sugar peroxidase and phenol in fully ripened stage low level in just harvested fruits.
