STUDIES ON FORMULATION OF POMEGRANATE BASED HERBAL HEALTH BEVERAGE

Abstract

In the present study, processing technology has been standardized to prepare a Pomegranate (Punica granatum) based herbal health beverage blended with Adulasa (Justicia adhatoda), Shatavari (Asparagus racemosus) leaf extract and Ginger juice to justify its health benefits. All ingredients were blended in notified proportions, i.e. 90% pomegranate juice, 4% ginger juice, 3% adulasa juice, 2.5% shatavari juice and 0.5% mint extract, then adjust the total soluble solids (TSS) content of beverage at 16 ºBrix. Prepared beverage sterilized at 105 oC for 5-7 min., cooled to room temperature, and then packed in plastic bottles. The physicochemical attributes of beverage recorded 0.03% acidity, 4.4 pH, 5.60% reducing sugar, TSS 16º Bx, and has deep red colour. The herbal health beverage reported techno-economically feasible, consumer acceptable and found more superior on the basis of taste sensations justifiable for its nutraceutical potential.
