Abstract

This research is targeted to determine the optimum yeast concentration used in turning dates molasses into ethanol. The molasses was made form dates were the sugar concentration was set to 200 g/L. different yeast loads was used in 70 hr fermentation process. pH of 7.0, temperature of 30 oC and mixing @ 1.7Hz was employed. The concentration of ethanol was measured every 5 hrs.The main finding was that load 35 g/L of yeast gave the highest ethanol production and most of the production was within the first 10 hrs of the fermentation process.
