PRODUCTION OF BIOACTIVE COMPOUNDS BY GEOTRICHUM CANDIDUMMAYUREE NALIYAPARA, SHEETAL PITHVA, KETAKI RAMANI, VON JOHNSON, AND BHARATKUMAR RAJIV MANUEL VYASAbstract The focus of the present study was to evaluate the production of bioactive compounds from G. candidum. G. candidum is used as a starter culture in dairy industry for cheese ripening. G. candidum produces various beneficial enzymes like amylase, lipase, gelatinase, glutaminase, L-asparaginase and glutamate decarboxylase. Furthermore, strain showed prebiotic utilization, GABA and cholesterol lowering activity. G. candidum can be used to prepare cheese that will confer additional benefit to the consumers. |
