PRODUCTION OF BIOACTIVE COMPOUNDS BY GEOTRICHUM CANDIDUM

Abstract

The focus of the present study was to evaluate the production of bioactive compounds from G. candidum. G. candidum is used as a starter culture in dairy industry for cheese ripening. G. candidum produces various beneficial enzymes like amylase, lipase, gelatinase, glutaminase, L-asparaginase and glutamate decarboxylase. Furthermore, strain showed prebiotic utilization, GABA and cholesterol lowering activity. G. candidum can be used to prepare cheese that will confer additional benefit to the consumers.
