CERTAIN PHYSICOCHEMICAL AND BIOCHEMICAL PARAMETERS OF PARTIALLY CURED PLINTILTS SARANA (HAM.) AND ITS ANTIBACTERIAL ACTIVITYDEBABRAT BAISHYA, MAMTA PANDEY AND MANAB DEKAAbstract The physicochemical parameters studied on partially cured Puntius sarana (Ham.) revealed comparatively low moisture content of 12.82%, high ash content of 23.79%, however, the total titrable acidity was recorded to be 1.8%. The pH of the sample was recorded to be 5.9. The minerals content as detected by XRF were Zr, Zn, Sr, Fe, Ti, Ca, K, Cl, S, P. Si and Mg. The study on biochemical parameters, on the other hand, showed 48% of protein content as estimated by Lowry's method, while it was found decreasing to 44.56% when estimated by Micro-kjeldahl's method and that for total nitrogen content was estimated to be 7.13%. The total carbohydrate content of the sample was quite negligible and could not therefore quantify, while, the reducing sugar content as estimated by DNS method was recorded to be 0.04%. The sample showed a higher fat content of 5.45%. The qualitative analysis of amino acids in the sample showed the presence of cystine, phenylalanine, lysine, hydroxyproline, aspartic acid, threonine, serine, alanine, cysteine, valine, butyric acid, leucine, isoleucine and proline. Antimicrobial activity of methanolic extract of partially cured Puntius sarana was tested against pathogenic bacterial isolates like E.coli, Salmonella sp., Klebsiella sp., Streptococcus sp. and non-pathogenic bacterial isolates like Lactobacillus sp., Leuconostoc sp. and Lactococcus sp.The fish extract showed zone of inhibition against all the pathogenic bacterial isolates. A diameter of 5mm inhibition zone was recorded in case of Salmonella sp., Klebsiella sp. with 4rnm inhibition zone.
